Cheesecake Preparation

Prepare the Batter

Preheat your oven to 200°C (390°F). In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth. Add eggs one at a time, mixing well after each addition.

Add Cream and Flour

Pour in the heavy cream, vanilla extract, and mix until fully combined. Sift in the flour and gently fold it into the batter until just incorporated.

Bake the Cheesecake

Pour the batter into a greased 8-inch springform pan. Bake for 40-50 minutes, or until the top is caramelized and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside for an hour.

Chill

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.

Prepare Toppings

In a small bowl, mix the mixed berries with honey and let them sit for about 10 minutes.

Serve

Slice the chilled cheesecake and serve with a dollop of whipped cream, topped with the honeyed mixed berries and a sprinkle of matcha powder.
