Preparation

    Prepare the Crispy Shrimp

    In a bowl, season the shrimp with salt and pepper. Dredge each shrimp in flour, dip in beaten egg, and coat with panko breadcrumbs. Heat oil in a deep pan to 350°F (175°C) and fry the shrimp until golden brown, about 2-3 minutes. Remove and drain on paper towels.

    Make the Spicy Big Eye Ahi Mixture

    In a bowl, combine diced Big Eye Ahi, Sriracha, mayonnaise, green onions, and sesame oil. Mix well and set aside.

    Prepare the Miyaki Soy Sauce

    In a small saucepan, combine soy sauce, mirin, and sugar. Heat over medium until sugar dissolves. Stir in toasted sesame seeds. Remove from heat and let cool.

Assembly

    Roll the Sushi

    On a nori sheet, spread a layer of sushi rice. Add a few pieces of crispy shrimp and a spoonful of spicy Big Eye Ahi mixture. Roll tightly and slice into bite-sized pieces. Repeat with remaining ingredients.

    Drizzle the Miyaki soy sauce over the rolls and serve with additional soy sauce on the side.
