Banana Bread
Prepare the Banana Bread
Preheat your oven to 350°F (175°C). In a mixing bowl, mash the ripe bananas until smooth. Mix in melted butter, sugar, egg, and vanilla extract. In another bowl, combine flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined. Pour the batter into a greased loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.

Make the Vanilla Bean Foster
In a skillet over medium heat, melt the butter. Add brown sugar and cinnamon, stirring until dissolved. Slice the bananas lengthwise and add them to the skillet. Carefully add the rum and ignite (if desired) to flambe. Cook for an additional 2-3 minutes until the bananas are tender and coated in the sauce.
Coconut Gelato
Prepare the Coconut Gelato
In a saucepan, whisk together coconut milk, sugar, and cornstarch over medium heat until thickened. Remove from heat and stir in vanilla extract and a pinch of salt. Let cool, then pour into an ice cream maker and churn according to the manufacturer's instructions until creamy.
Assembly
Assemble the Dish
Once the banana bread has cooled, slice it and dip each slice in the Vanilla Bean Foster sauce. Serve warm with a scoop of coconut gelato on the side.
