Salad Preparation

Prepare the Baby Romaine
Wash and dry the baby romaine lettuce. Tear into bite-sized pieces and place in a large salad bowl.

Cook the Bacon Bits
If using raw bacon, cook until crispy, then chop into bits. If using pre-packaged bacon bits, set aside.

Add Ingredients
Add the bacon bits and Parmesan cheese to the bowl of romaine.
Lime Vinaigrette Preparation

Make the Vinaigrette
In a small bowl, whisk together lime juice, olive oil, honey, minced garlic, salt, and black pepper to taste.

Dress the Salad
Drizzle the lime vinaigrette over the salad and toss gently to combine.
Gremolata Breadcrumbs Preparation

Prepare the Breadcrumbs
In a skillet over medium heat, combine breadcrumbs, olive oil, minced garlic, chopped parsley, and lemon zest. Cook until the breadcrumbs are golden and crispy, about 5 minutes.

Sprinkle the gremolata breadcrumbs over the dressed salad and serve immediately.
