    Prepare the Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix in rice vinegar and sugar while the rice is still warm. Allow it to cool slightly.

    Make the Creamy Avocado

    In a bowl, mash the avocados with lemon juice and salt until smooth. Set aside.

    Prepare the Cucumber and Crab Mix

    Julienne the cucumber into thin strips. In a separate bowl, mix the crab meat with a little bit of lemon juice and salt to taste.

    Assemble the Roll

    On a bamboo sushi mat, lay a sheet of nori shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Spread a layer of creamy avocado in the center, followed by the crab mix and cucumber strips.

    Roll the Sushi

    Using the bamboo mat, roll the sushi away from you, applying gentle pressure to keep it tight. When you reach the border of nori, wet it with a little water to seal the roll. Repeat with remaining ingredients.

    Slice and Serve

    Using a sharp knife, slice the rolls into bite-sized pieces. Serve with soy sauce and wasabi if desired.
