Prepare the Tuna

    Coat the Tuna

    Season the Ahi tuna steaks with salt and black pepper. Press the sesame seeds onto both sides of the tuna steaks until well coated.

    Sear the Tuna

    In a skillet, heat olive oil over medium-high heat. Sear the tuna steaks for about 30 seconds on each side for rare, or longer if desired. Remove from heat and set aside.

Caramelize the Onions

    Cook the Onions

    In a separate pan, heat the butter and olive oil over medium heat. Add sliced onions, salt, and sugar. Cook, stirring frequently, until the onions are caramelized, about 15-20 minutes.

Prepare the Spicy Ponzu

    Mix the Sauce

    In a bowl, combine soy sauce, rice vinegar, lime juice, Sriracha, and dashi stock. Stir well and adjust to taste.

Assemble the Dish

    Plate the Dish

    Slice the seared tuna into thin pieces. Arrange on a plate with caramelized onions, sprinkle with chopped scallions and fried garlic. Drizzle with spicy ponzu sauce before serving.
