Prepare Wonton Chips
Preheat the vegetable oil in a deep pan over medium heat. Cut the wonton wrappers into triangles and fry them in batches until golden brown and crispy. Remove and drain on paper towels.

Make Ahi Poke
Dice the ahi tuna into small cubes. In a bowl, combine the soy sauce, sesame oil, chopped green onions, and sesame seeds. Gently mix in the diced tuna and let it marinate for about 10 minutes.
Wasabi Aioli

Prepare Wasabi Aioli
In a small bowl, mix together the mayonnaise, wasabi paste, lime juice, and salt. Adjust the seasoning as needed.
Assemble Nachos

Assemble Ahi Poke Nachos
On a serving platter, layer the fried wonton chips. Top with the marinated ahi poke, pickled jalapenos, and sprinkle with torn nori sheets. Drizzle with wasabi aioli before serving.
