Fried Chicken

Grilled Sweet Corn

Method

Fried Chicken

  1. 1

    Prepare the Chicken

In a large bowl, combine the flour, salt, black pepper, garlic powder, and paprika. Dredge each piece of chicken in the flour mixture, ensuring it is well coated.

  2. 2

    Fry the Chicken

In a deep skillet or fryer, heat the oil to 350°F (175°C). Fry the chicken pieces in batches until golden brown and cooked through, approximately 15-18 minutes. Drain on paper towels.

Coriander Maple Glaze

  1. 3

    Make the Glaze

In a small saucepan, combine the maple syrup, chopped coriander, soy sauce, lime juice, and red pepper flakes. Bring to a simmer over medium heat and cook for 5 minutes until slightly thickened.

Grilled Sweet Corn

  1. 4

    Grill the Corn

Preheat a grill to medium-high heat. Brush the sweet corn with melted butter and season with salt and pepper. Grill the corn for about 10 minutes, turning occasionally, until charred and tender.

Assembly

  1. 5

    Serve

Drizzle the coriander maple glaze over the fried chicken before serving. Serve alongside the grilled sweet corn.
