Prepare the Broth

    Cook the Aromatics

    In a large pot, heat the sesame oil over medium heat. Add minced garlic and grated ginger, sauté until fragrant, about 2 minutes.

    Add Broth Ingredients

    Pour in the chicken broth, soy sauce, and mirin. Bring to a simmer and let cook for 15 minutes.

    Finish the Broth

    Stir in the toasted sesame seeds and remove from heat. Strain if desired for a smoother broth.

Prepare the Toppings

    Roast the Tomatoes

    Preheat the oven to 400°F (200°C). Toss cherry tomatoes with olive oil, salt, and pepper. Roast in the oven for 15-20 minutes until caramelized.

    Cook the Ramen Noodles

    In a separate pot, cook the ramen noodles according to package instructions. Drain and set aside.

    Prepare Soft-Boiled Eggs

    Bring a pot of water to a boil. Gently add eggs and boil for 6-7 minutes. Transfer to an ice bath, cool, peel, and slice in half.

Assemble the Ramen

    In serving bowls, divide the cooked ramen noodles. Pour the rich sesame broth over the noodles. Top with sliced pork belly, roasted tomatoes, soft-boiled eggs, and garnish with sliced green onions.
