Method

Steak Preparation

    Season the Ribeye

    Generously season the ribeye steak with salt and black pepper on both sides.

    Sear the Steak

    Heat olive oil in a cast-iron skillet over high heat. Once hot, add the ribeye and sear for about 4-5 minutes on each side for medium-rare. Adjust time for desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing.

Watercress Salad

    Prepare the Salad

    In a bowl, combine watercress, lemon juice, olive oil, salt, and black pepper. Toss gently to coat.

    Prepare the Potatoes

    Peel and cut the russet potatoes into thin strips.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown, about 4-5 minutes. Drain on paper towels and season with salt.

Roasted Bone Marrow

    Preheat the oven to 425°F (220°C). Place marrow bones on a baking sheet, season with salt and pepper, and roast for 15-20 minutes until the marrow is soft and bubbly.

    Serve the roasted bone marrow with fresh parsley and lemon wedges on the side.
