    Prepare the Ribs

    Preheat your smoker to 225°F (107°C). Clean the pork ribs and pat them dry with paper towels.

    Make the Spice Rub

    In a bowl, combine Szechuan peppercorns, brown sugar, soy sauce, garlic powder, ginger powder, cayenne pepper, salt, and black pepper. Mix well to create a spice rub.

    Season the Ribs

    Rub the spice mixture generously over the ribs, ensuring that both sides are well-coated.

    Smoke the Ribs

    Place the ribs in the smoker and smoke for about 3 hours, maintaining the temperature at 225°F (107°C).

    Glaze the Ribs

    After 3 hours, brush Roy’s Original Mongolian Sauce over the ribs. Smoke for an additional 30 minutes to allow the glaze to set.

    Serve

    Remove the ribs from the smoker, let them rest for 10 minutes, then slice and serve with extra Mongolian sauce on the side.
