Prepare the Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear. Drain well.

Cook the Rice
In a rice cooker or pot, combine the rinsed rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for an additional 10 minutes.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while fanning it to cool.
Assemble the Roll

Lay Out Nori
Place a sheet of nori on a bamboo sushi mat, shiny side down.

Spread the Rice
Wet your hands to prevent sticking. Take a handful of sushi rice and evenly spread it over the nori, leaving about an inch at the top.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge of the nori with a bit of water.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean edges.
Serve

Garnish and Serve
Serve the sushi rolls with soy sauce, wasabi, and pickled ginger on the side.
