Method

Preparing the Mahi Mahi

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Coating

    In a bowl, mix together the finely chopped macadamia nuts, panko breadcrumbs, salt, and black pepper.

    Coat the Mahi Mahi

    Dip each mahi mahi fillet into the beaten egg, then coat it with the macadamia mixture, pressing gently to adhere.

    Bake the Mahi Mahi

    Place the coated fillets on a baking sheet lined with parchment paper. Drizzle olive oil over the top and bake for 15-20 minutes until golden brown and cooked through.

Making the Lobster Cream Sauce

    Sauté Aromatics

    In a saucepan, melt the butter over medium heat. Add the minced garlic and shallot, cooking until fragrant and translucent.

    Deglaze with Wine

    Pour in the white wine, scraping up any bits from the bottom of the pan. Allow it to simmer for about 5 minutes.

    Add Cream and Lobster

    Stir in the heavy cream, cooked lobster meat, salt, and pepper. Let it simmer for another 5-7 minutes until slightly thickened.

    Finish with Parsley

    Remove from heat and stir in the chopped parsley before serving.
