Preparation

    Prepare the Topping

    Preheat the oven to 350°F (175°C). In a small saucepan, melt 1/4 cup of butter and 1/4 cup of brown sugar over medium heat until combined. Pour this mixture into the bottom of a 9-inch round cake pan.

    Arrange Pineapple and Cherries

    Arrange the pineapple rings on top of the butter and brown sugar mixture in the cake pan. Place a maraschino cherry in the center of each pineapple ring.

Baking the Cake

    Mix Dry Ingredients

    In a bowl, whisk together the flour, granulated sugar, baking powder, and salt.

    Cream Butter and Sugar

    In a separate bowl, cream together the remaining 1/2 cup of unsalted butter and 1/2 cup of brown sugar until light and fluffy.

    Combine Ingredients

    Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Gradually add the dry ingredients to the creamed mixture alternately with the milk, starting and ending with the flour mixture.

    Bake the Cake

    Pour the batter over the pineapple and cherries in the cake pan. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

Serving

    Cool and Serve

    Let the cake cool in the pan for 10 minutes, then invert onto a serving plate. Serve warm, optionally with a scoop of vanilla ice cream on the side.
