    Prepare the Lobster

    Bring a large pot of salted water to a boil. Add the whole Maine lobsters and cook for about 8-10 minutes until they turn bright red. Remove them and let them cool. Once cool, remove the meat and set aside. Reserve the shells.

    Sauté Aromatics

    In a large pot, melt the butter over medium heat. Add the shallots, garlic, and ginger. Sauté until softened and fragrant, about 5-7 minutes.

    Add Curry and Coconut

    Stir in the Thai red curry paste and cook for another 2 minutes. Then, add the coconut milk and fish stock. Stir well to combine.

    Simmer the Bisque

    Add the lobster shells to the pot and bring the mixture to a simmer. Let it cook on low heat for about 30 minutes, allowing the flavors to meld.

    Blend the Soup

    Remove the lobster shells from the pot. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half.

    Finish the Bisque

    Stir in the reserved lobster meat, lime juice, and season with salt and black pepper to taste. Heat through for another 5 minutes.

    Serve

    Ladle the bisque into bowls and garnish with fresh cilantro. Enjoy!
