Sesame Miso Truffled Greens

Method

Preparation of Ingredients

  1. 1

    Prepare the Wagyu Beef

Thinly slice the Wagyu beef against the grain into strips. Season with salt and pepper. Set aside.

  2. 2

    Cook Tempura Asparagus

Dip asparagus in tempura batter and fry until golden brown. Drain on paper towels.

  3. 3

    Prepare the Snow Crab

If using fresh snow crab, remove the meat from the shell and shred it. If using canned, drain and set aside.

  4. 4

    Prepare the Avocado

Slice the avocado in half, remove the pit, and scoop out the flesh. Slice into thin strips.

Make Sesame Miso Truffled Greens

  1. 5

    Mix the Dressing

In a small bowl, whisk together the sesame oil, white miso paste, and truffle oil until smooth.

  2. 6

    Combine Greens

In a large bowl, toss the mixed greens with the dressing. Sprinkle with sesame seeds.

Assemble the Roll

  1. 7

    Prepare Sushi Rice

Cook sushi rice according to package instructions. Let it cool slightly before using.

  2. 8

    Roll the Ingredients

Lay a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori. Place slices of Wagyu beef, snow crab, avocado, and tempura asparagus in a line across the rice. Add a handful of sesame miso truffled greens.

  3. 9

    Roll and Slice

Carefully roll the sushi away from you, using the mat to help shape it tightly. Once rolled, use a sharp knife to slice the roll into 6-8 pieces.
