Prepare Sushi Rice

Cook the rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the rice
Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then fold into the warm rice. Allow it to cool to room temperature.
Make Garlic Ponzu Sauce

Combine ingredients
In a small bowl, whisk together soy sauce, citrus juice, minced garlic, mirin, and sesame oil until well combined.
Assemble Aloha Roll

Prepare the roll
On a bamboo sushi mat, place a sheet of nori, shiny side down. Wet your hands, then spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.

Roll tightly
Using the bamboo mat, carefully roll the nori away from you, pressing gently to form a tight roll. Seal the edge with a bit of water.

Slice and serve
Using a sharp knife, slice the roll into 6-8 pieces. Drizzle with garlic ponzu sauce before serving.
