    Prepare the Salmon

    Rinse the salmon fillets under cold water and pat them dry with paper towels. Season both sides of the fillets with salt and black pepper.

    Prepare the Garlic

    Peel and smash the garlic cloves lightly with the flat side of a knife. This will release their flavor while poaching.

    Heat the Olive Oil

    In a large, heavy-bottomed saucepan or skillet, pour the extra virgin olive oil. Add the rosemary sprigs and smashed garlic cloves. Heat the oil gently over low heat until it reaches a temperature of about 180°F (82°C). Use a kitchen thermometer to check the temperature.

    Poach the Salmon

    Once the oil is heated, carefully add the salmon fillets to the oil. Ensure that the fillets are fully submerged. Poach the salmon for about 15-20 minutes, or until the fish flakes easily with a fork and is opaque in color.

    Add Lemon Zest

    During the last 5 minutes of cooking, sprinkle the lemon zest over the salmon for added flavor.

Serving

    Once the salmon is cooked, carefully remove the fillets from the oil using a slotted spatula. Place them on a serving platter.
