    Prepare the Filling

    In a medium saucepan, combine the diced apples, brown sugar, cinnamon, and lemon juice. Cook over medium heat, stirring occasionally, for about 10-15 minutes until the apples are tender and the mixture is slightly thickened. Remove from heat and stir in the butter until melted. Let cool.

    Make the Dough

    In a large bowl, whisk together the flour and salt. Add the cold, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add the ice-cold water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Prepare for Frying

    In a deep skillet or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). While the oil is heating, roll out one disc of dough on a lightly floured surface to about 1/8 inch thick. Cut into circles using a 4-inch round cutter.

    Assemble the Pies

    Place about 2 tablespoons of the cooled apple filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for extra security.

    Fry the Pies

    Carefully place the filled pies into the hot oil, frying in batches to avoid overcrowding. Fry for about 3-4 minutes on each side until golden brown. Remove with a slotted spoon and drain on paper towels.

    Coat with Cinnamon Sugar

    In a small bowl, combine the granulated sugar and cinnamon. While the pies are still warm, roll them in the cinnamon sugar mixture to coat evenly.
