Panna Cotta Preparation

Bloom the Gelatin
In a small bowl, combine the gelatin powder with 3 tablespoons of cold water. Stir well and let it sit for about 5 minutes to bloom.

Heat the Cream Mixture
In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir occasionally until the mixture is warm but not boiling.

Add Spices and Gelatin
Remove the saucepan from the heat. Stir in the ground cinnamon, ground nutmeg, and ground ginger. Then, add the bloomed gelatin and vanilla extract. Mix until the gelatin is fully dissolved.

Pour and Chill
Pour the panna cotta mixture into individual serving cups or a large mold. Refrigerate for at least 4 hours or until set.

Prepare the Pears
Peel, core, and slice the ripe pears into thin wedges.

Cook the Pears
In a skillet over medium heat, melt the butter. Add the pear slices, maple syrup, lemon juice, and ground cinnamon. Cook for about 5-7 minutes, stirring occasionally, until the pears are tender and caramelized.

Cool the Topping
Remove the skillet from heat and let the spiced pears cool slightly before serving on top of the panna cotta.
