If using whole dried figs, slice them in half or into quarters for easier serving.
Making the Dressing

Combine Buttermilk and Saba
In a mixing bowl, whisk together the buttermilk and San Giacomo saba until well combined.

Slowly drizzle in the extra virgin olive oil while continuing to whisk, until the dressing is smooth and creamy.

Add black pepper and salt to taste, whisking to incorporate.
