Chicken Preparation

Marinate the Chicken
In a bowl, combine olive oil, salt, black pepper, and garlic powder. Add the chicken breasts and coat them evenly. Let them marinate for at least 30 minutes.

Grill the Chicken
Preheat the grill to medium-high heat. Grill the marinated chicken breasts for 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C). Brush the chicken with BBQ sauce during the last 2 minutes of grilling.

Rest the Chicken
Remove the grilled chicken from the grill and let it rest for 5 minutes before slicing.
Coleslaw Preparation

Mix Coleslaw Ingredients
In a large bowl, combine shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well until all ingredients are combined.

Chill the Coleslaw
Cover the coleslaw and refrigerate for at least 20 minutes to allow the flavors to meld.
Assembly

Assemble the Sandwich
Slice the brioche buns in half. Place a grilled chicken breast on the bottom half of the bun, add a generous scoop of coleslaw on top, and add pickles if desired. Cover with the top half of the bun.
