Prepare the Chicken
Start by seasoning the chicken breasts with salt, black pepper, cumin, and paprika on both sides.
Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add minced garlic, diced onion, and bell peppers. Sauté until the vegetables are tender, about 5-7 minutes.
Cook the Chicken
Push the sautéed vegetables to one side of the skillet. Add the seasoned chicken breasts to the other side. Cook for about 6-7 minutes on each side or until the chicken is cooked through and has a nice golden color.
Add Lime Juice
Once the chicken is cooked, drizzle lime juice over the chicken and vegetables, mixing them together in the skillet. Cook for an additional minute.
Prepare the Rice and Beans
While the chicken is cooking, prepare the Mexican rice and charro beans according to your preferred method or package instructions.
Serve
Serve the Pollo Santa Fe hot, alongside the Mexican rice and charro beans on the plate.
