Preparation of Protein

Cook the Chicken or Beef

In a skillet over medium heat, cook the chicken breast or ground beef until fully cooked, about 7-10 minutes for chicken or 5-7 minutes for beef. Ensure the meat is no longer pink.

Season the Protein

Add cumin, chili powder, garlic powder, salt, and black pepper to the cooked chicken or beef. Stir well to combine and let cook for an additional 2-3 minutes.

Sauté the Vegetables

In the same skillet, add sliced bell pepper, onion, and jalapeño. Sauté for 5-7 minutes until they are softened and slightly caramelized.

Assemble Quesadillas

Layer Ingredients

On one half of each tortilla, layer the cooked protein, sautéed vegetables, and a mix of cheddar and Monterey Jack cheese.

Fold and Cook

Fold the tortilla in half and place it in a skillet over medium heat. Cook for 3-4 minutes on each side or until the tortilla is golden and the cheese has melted.

Serving

Plate the Quesadilla

Cut each quesadilla into wedges and serve with Mexican rice and refried beans on the side. Add sour cream on top or on the side as requested.
