Burrito Preparation Directions
Cook the Protein
In a skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add 1 pound of diced chicken or beef. Season with 1 tablespoon of chili powder, 1 teaspoon of cumin, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of salt, and 1 teaspoon of black pepper. Cook until the meat is fully cooked, about 7-10 minutes. Remove from heat.
Prepare the Tortillas
Warm the flour tortillas in a dry skillet over low heat for about 30 seconds on each side, just until pliable. Remove from heat and set aside.
Assemble the Burritos
On each warmed tortilla, place about 1/4 cup of refried beans, followed by a portion of the cooked chicken or beef. Optionally, sprinkle some chopped fresh cilantro on top. Roll the tortillas tightly to enclose the filling.
Prepare the Chili Con Queso
In a small saucepan over low heat, warm 1 cup of chili con queso until melted and smooth. Stir occasionally to prevent burning.
Serve the Burritos
Place the assembled burritos on a plate. Drizzle the warm chili con queso generously over the top. Serve with 2 cups of Mexican rice on the side.
