Method
Enchilada Filling
Cook the Meat
In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until softened.
Add Protein
Add ground beef or diced chicken to the skillet. Cook until browned and fully cooked, about 6-8 minutes for beef and 10-12 minutes for chicken.
Season the Filling
Stir in chili powder, cumin, salt, and black pepper. Mix well and cook for an additional 2-3 minutes. Remove from heat.
Add Cheese
If using cheese filling, simply mix in 1 cup of grated cheese into the cooked protein mixture. Set aside.
Enchilada Sauce
Prepare Sauce
In a saucepan, combine tomato sauce, chicken or beef broth, chili powder, cumin, garlic powder, salt, and black pepper. Stir well.
Simmer Sauce
Bring to a simmer over medium heat, then reduce heat to low and let it simmer for 10-15 minutes, stirring occasionally.
Enchiladas Assembly
Preheat Oven
Preheat oven to 350°F (175°C).
Fill Tortillas
Warm corn tortillas slightly to make them pliable. Spoon some of the filling into each tortilla and roll them up tightly.
Place in Baking Dish
Spread a thin layer of enchilada sauce on the bottom of a baking dish. Place rolled tortillas seam-side down in the dish.
Top with Sauce and Cheese
Pour remaining sauce over the rolled enchiladas and sprinkle with grated cheese.
Rice & Beans
Cook Rice
In a pot, combine white rice and water. Add salt, bring to a boil, then lower the heat, cover, and simmer for about 15 minutes or until rice is cooked and water is absorbed.
Heat Beans
In a small saucepan, heat black beans over medium heat until warmed through, about 5-7 minutes.
