Preparation of Vegetables

    Prepare the Mushrooms

    Clean the cremini and portobello mushrooms with a damp cloth. Remove the stems and slice them into thin pieces.

    Chop the Green Peppers

    Remove the seeds from the green peppers and chop them into small pieces.

    Dice the Roma Tomatoes

    Wash the roma tomatoes, remove the stems, and dice them into small cubes.

    Slice the Jalapeños

    Remove the stems from the jalapeños and slice them thinly. If you prefer less heat, remove the seeds.

Preparation of Olives and Garlic

    Prepare the Olives

    Pit the Kalamata and green olives if necessary, then chop them coarsely.

    Prepare the Roasted Garlic

    Peel the roasted garlic cloves and mash them with a fork until smooth.

Preparation of Sun-dried and Marinated Tomatoes

    Chop the Sun-dried Tomatoes

    If the sun-dried tomatoes are not already chopped, cut them into small pieces.

    Prepare the Marinated Tomatoes

    Drain the marinated tomatoes and chop them into small pieces.

Caramelizing Onions

    Caramelize the Onions (if not pre-made)

    Slice the onions thinly and cook them in a skillet over medium-low heat with a bit of oil until they are soft and golden brown, about 20 minutes. Stir occasionally to prevent burning.
