Cheese Sauce

Make the Roux
In a medium saucepan over medium heat, melt the unsalted butter. Once melted, add the all-purpose flour and whisk continuously for about 2 minutes until the mixture is bubbly and slightly golden.

Add Milk
Gradually pour in the whole milk while whisking to prevent lumps. Continue whisking until the mixture thickens (about 5-7 minutes).

Add Cheeses
Reduce the heat to low and add the sharp cheddar, gruyere, mozzarella, and parmesan cheeses. Stir until all the cheese has melted and the sauce is smooth.

Season the Sauce
Add salt, black pepper, garlic powder, and onion powder to the cheese sauce, mixing well to combine. Set aside.
Pasta

Cook the Pasta
Bring a large pot of salted water to a boil. Add the gemelli pasta and cook according to package instructions until al dente. Drain and set aside.
Combine and Bake

Mix Pasta and Cheese Sauce
In a large mixing bowl, combine the cooked gemelli pasta with the cheese sauce, stirring until the pasta is well coated.

Prepare the Topping
In a small bowl, mix the bread crumbs with melted butter until evenly coated.

Assemble for Baking
Preheat the oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish and sprinkle the buttered bread crumbs evenly over the top.

Bake in the preheated oven for 20-25 minutes or until the top is golden brown and crispy.
