Method
Granola Preparation
Preheat the Oven
Preheat your oven to 350°F (175°C).
Mix Dry Ingredients
In a large bowl, mix together old-fashioned rolled oats, chopped almonds, salt, and cinnamon.
Add Sweetener
Pour honey over the oat mixture and stir until everything is well-coated.
Spread on Baking Sheet
Spread the mixture evenly on a baking sheet lined with parchment paper.
Bake the Granola
Bake in the preheated oven for 20-25 minutes, stirring halfway through, until golden brown. Let it cool completely.
Sauce Preparation
Prepare Strawberry Sauce
In a small saucepan, combine sliced strawberries and sugar. Cook on medium heat until the strawberries break down and release their juices, about 5-7 minutes. Remove from heat and let cool.
Melt Dark Chocolate
In a microwave-safe bowl, melt dark chocolate chips in 30-second intervals, stirring in between, until smooth. Set aside.
Whipped Cream Preparation
Whip the Cream
In a mixing bowl, beat 1 cup of heavy cream, powdered sugar, and vanilla extract until soft peaks form. Be careful not to over-whip.
Assembly
Layer the Parfait
In a glass or parfait dish, layer granola, strawberry sauce, and whipped cream. Repeat layers until all ingredients are used, finishing with whipped cream on top.
Drizzle with Chocolate
Drizzle melted dark chocolate over the top of the parfait.
Serve Immediately
Serve the berry parfait immediately for the best texture and flavor.
