Preparation

    Prepare the Seafood

    Rinse the shrimp, scallops, clams, and mussels under cold water. Remove the shells from the shrimp if necessary, and set aside.

    Chop the Vegetables

    Finely chop the red onion, and prepare the marinated tomatoes if they aren't already cut. Set aside the sweet corn and spinach.

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the capellini pasta and cook according to package instructions until al dente. Drain and set aside.

Cooking

    Sauté the Vegetables

    In a large skillet over medium heat, add a splash of olive oil. Add the chopped red onion and sauté for about 3-4 minutes until translucent. Stir in the sweet corn and spinach, cooking until the spinach wilts.

    Cook the Seafood

    Add the shrimp, scallops, clams, and mussels to the skillet. Sprinkle with pepper flakes and cook for about 5-7 minutes until the seafood is cooked through and the clams and mussels have opened.

    Combine Pasta and Sauce

    Add the cooked capellini pasta to the skillet along with the marinated tomatoes, gremolata, and lemon caper wine butter sauce. Toss everything together gently to coat the pasta and heat through for about 2-3 minutes.

Serving

    Serve the Dish

    Transfer the seafood pasta to serving plates and garnish with extra gremolata if desired. Serve hot and enjoy!
