    Prepare the Chicken

    Shred or dice the cooked chicken breast into bite-sized pieces and set aside.

    Wash and chop the romaine lettuce, cherry tomatoes, cucumber, and red onion. Combine these ingredients in a large salad bowl.

    In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and black pepper until well combined.

    Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
