Method

Bolognese Sauce Preparation

  1. 1

    Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.

  2. 2

    Cook the Meats

Add the ground beef and ground pork to the pot. Cook, breaking the meat apart with a spoon, until browned, about 8-10 minutes.

  3. 3

    Add Garlic and Tomato Paste

Stir in the minced garlic and tomato paste, cooking for an additional 2 minutes until fragrant.

  4. 4

    Incorporate Tomatoes and Wine

Pour in the crushed tomatoes and red wine. Stir well to combine all ingredients.

  5. 5

    Simmer the Sauce

Add milk, salt, black pepper, oregano, and basil. Bring to a simmer, then reduce the heat to low. Cover and let it cook for at least 30 minutes, stirring occasionally.

Pasta Cooking

  1. 6

    Boil the Water

In a large pot, bring plenty of salted water to a boil.

  2. 7

    Cook the Rigatoni

Add the rigatoni pasta to the boiling water and cook according to package instructions until al dente, usually about 10-12 minutes.

  3. 8

    Drain the Pasta

Once cooked, drain the pasta in a colander and reserve a cup of pasta water.

Serving

  1. 9

    Combine Pasta and Sauce

Add the drained rigatoni to the Bolognese sauce, mixing well. If the sauce is too thick, add some reserved pasta water to achieve desired consistency.

  2. 10

    Plate and Garnish

Serve the rigatoni on plates, topped with grated Asiago cheese.
