Prepare the Steak
Season the thinly sliced steak with salt and black pepper.

Cook the Vegetables
In a large skillet over medium heat, add a tablespoon of olive oil. Add the sliced mushrooms, bell peppers, and onion. Sauté until the vegetables are tender and caramelized, about 8-10 minutes. Remove from the skillet and set aside.

Cook the Steak
In the same skillet, add another tablespoon of olive oil if needed. Add the seasoned steak to the skillet and cook for 2-3 minutes on each side, or until it is cooked to your preferred doneness. Remove from heat and set aside.

Make the Cheese Fondue
In a saucepan over medium heat, combine the milk and cornstarch, stirring until smooth. Gradually add the pepperjack cheese, stirring continuously until melted and creamy. Add garlic powder, salt, and black pepper to taste. Remove from heat.

Assemble the Philly Steak Sandwiches
Slice the ciabatta bread pieces in half. Layer the cooked steak, sautéed vegetables, and pour the pepperjack cheese fondue over the top. Close the sandwiches and serve warm.
