Chicken Preparation

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Chicken

    In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, salt, and black pepper. In another bowl, beat the eggs. Dip each chicken breast first into the beaten eggs, then coat with the Parmesan breadcrumb mixture.

    Bake Chicken

    Place the coated chicken breasts on a baking sheet lined with parchment paper. Drizzle with olive oil. Bake in the preheated oven for 25-30 minutes or until golden brown and cooked through.

Pepper-Tomato Sauce Preparation

    Sauté Vegetables

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and garlic, and sauté until softened.

    Add Peppers and Tomatoes

    Add the chopped red bell peppers and canned crushed tomatoes. Season with salt, black pepper, and dried basil. Simmer for 15-20 minutes until the sauce thickens.

Broccoli Preparation

    Steam Broccoli

    In a pot with boiling water, steam the broccoli florets for about 5-7 minutes until bright green and tender-crisp. Season with salt and a drizzle of olive oil before serving.

Garlic Mashed Potatoes Preparation

    Boil Potatoes and Garlic

    In a large pot, add the chopped potatoes and garlic cloves. Cover with water, add salt, and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.

    Mash and Mix

    Drain the potatoes and garlic. In the same pot, add butter and milk. Mash together until smooth. Season with salt and black pepper to taste.
