    Prepare the Corned Beef

    If using pre-cooked corned beef, slice it thinly against the grain. If cooking from raw, boil the corned beef in water with spices for about 3 hours or until tender. Let it cool slightly and then slice.

    Prep the Sauerkraut

    Drain the sauerkraut in a colander to remove excess liquid. Rinse lightly if you prefer a milder flavor.

    Gather Ingredients

    Lay out all the ingredients: sliced corned beef, sauerkraut, Swiss cheese, rye bread, and Thousand Island dressing.

    Assemble the Sandwich

    Start by spreading a layer of Thousand Island dressing on one side of a slice of rye bread. Layer on the sliced corned beef, followed by the sauerkraut, and top with Swiss cheese. Place another slice of bread on top, dressing side down.

    Grill the Sandwich

    In a skillet or griddle over medium heat, melt 1 tablespoon of butter. Place the sandwich in the skillet and grill until golden brown, about 3-4 minutes. Flip the sandwich, add the remaining butter to the skillet, and grill the other side until golden brown and the cheese is melted.
