Method

Preparation of Farro

    Cook Farro

    In a medium pot, bring 3 cups of water to a boil. Add 1 cup of farro and a pinch of salt. Reduce heat to low, cover, and simmer for about 30 minutes or until tender. Drain excess water and set aside to cool.

Vegetable Preparation

    Prepare Vegetables

    While the farro is cooking, shred the broccoli and cabbage. Roast the corn in a skillet over medium heat until lightly browned. Dice the red onion. Combine the shredded broccoli, cabbage, roasted corn, diced red onion, baby arugula, and marinated tomatoes in a large mixing bowl.

Mixing the Salad

    Combine Ingredients

    Once the farro has cooled, add it to the bowl of vegetables. Add dried cranberries, crumbled feta cheese, and pepitas to the mixture.

Dressing the Salad

    Add Dressing

    Drizzle the sticky chardonnay dressing over the salad. Toss everything together gently until well mixed and coated with the dressing.

Serving

    Taste and adjust seasoning if necessary. Serve immediately or chill for 30 minutes for flavors to meld.
