Honey-Lavender Simple Syrup Preparation

Make the Simple Syrup
In a small saucepan, combine 1 cup of water and 1 cup of honey over medium heat. Stir until the honey is dissolved. Add 2 tablespoons of lavender buds and bring the mixture to a gentle simmer.

Steep and Strain
Allow the syrup to simmer for about 5 minutes. Remove from heat and let it steep for another 15 minutes. Strain the syrup through a fine mesh sieve to remove the lavender buds, then let it cool.
Cocktail Assembly

Combine the Base Ingredients
In a cocktail shaker filled with ice, combine 2 oz of Empress Gin and 1 oz of elderflower liqueur.

Add the Syrup
Add 1 oz of the prepared honey-lavender simple syrup to the shaker.

Shake it Up
Shake the mixture vigorously for about 15 seconds until well chilled.

Strain and Serve
Strain the mixture into a chilled glass filled with fresh ice.

Top with Bubbly
Pour 4 oz of your preferred bubbly (sparkling wine or club soda) over the cocktail mixture.

Garnish the drink with 5 edible flowers for a beautiful presentation.
