Method
Prepare Mahi Mahi

Season the Fish
Rub the Mahi Mahi fillets with olive oil and coat them evenly with Cajun seasoning.

Cook the Fish
Heat a skillet over medium-high heat. Cook the seasoned Mahi Mahi fillets for 4-5 minutes on each side or until they are cooked through and have a blackened crust. Remove from heat and let rest.
Make the Green Apple Cabbage Slaw

Mix the Slaw Ingredients
In a large bowl, combine shredded green cabbage, julienned green apple, grated carrot, chopped cilantro, lime juice, and salt. Toss well to combine.
Prepare the Roasted Salsa

Roast the Vegetables
Preheat the oven to 425°F (220°C). On a baking sheet, add quartered tomatoes, quartered red onion, halved jalapeño, and garlic cloves. Roast in the oven for 20-25 minutes until charred.

Blend the Salsa
Once roasted, let the vegetables cool slightly, then transfer them to a blender. Add chopped cilantro, lime juice, and salt. Blend until smooth.
Make the Jalapeño-Avocado Aioli

Combine the Aioli Ingredients
In a bowl, mash the ripe avocado and mix in minced jalapeño, minced garlic, mayonnaise, lime juice, and salt. Stir until smooth and well combined.
Prepare the Mexican Rice

Add Liquids
Add chicken broth and tomato sauce to the saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked. Season with salt to taste.
Assemble Tacos

Warm the Tortillas
In a dry skillet, warm the El Milagro corn tortillas one at a time for about 30 seconds on each side.
