Method

Marinated Protein

  1. 1

    Prepare Marinade

In a mixing bowl, combine yogurt, minced garlic, ground cumin, ground coriander, paprika, ground turmeric, olive oil, salt, black pepper, and lemon juice. Mix well to create a marinade.

  2. 2

    Marinate Protein

Add the chicken or beef to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for better flavor.

  3. 3

    Cook Protein

In a skillet over medium-high heat, warm a bit of olive oil. Add the marinated chicken or beef and cook until browned and cooked through, about 6-8 minutes for chicken or 8-10 minutes for beef. Remove from heat and let rest before slicing.

Rice

  1. 4

    Rinse Rice

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

  2. 5

    Cook Rice

In a medium pot, bring 2 cups of water to a boil. Add the rinsed rice and salt. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork before serving.

Salad

  1. 6

    Prepare Salad

In a large bowl, combine diced cucumber, diced tomato, sliced red onion, and chopped parsley.

  2. 7

    Dress Salad

Drizzle with olive oil and lemon juice. Season with salt and black pepper to taste. Toss gently to combine.

Pita

  1. 8

    Warm Pita

Warm the pita bread in a toaster or on a skillet for a couple of minutes until heated through. Keep warm until serving.
