Marinade Preparation

Combine Marinade Ingredients
In a mixing bowl, combine the olive oil, lemon juice, minced garlic, ground cumin, ground paprika, ground coriander, salt, and black pepper. Whisk together until well blended.

Marinate the Chicken
Cut the boneless chicken breasts into 1-inch cubes. Place the chicken pieces in a large resealable plastic bag or bowl. Pour the marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour, or up to overnight for more flavor.

Prepare the Skewers
If using wooden skewers, soak them in water for 30 minutes to prevent burning on the grill. If using metal skewers, they are ready to use.

Assemble the Kebabs
Thread the marinated chicken pieces onto the skewers. If using, alternate with pieces of chopped bell peppers, red onion, and zucchini for extra flavor and color. Leave a little space between each piece for even cooking.

Preheat the Grill
Preheat your grill to medium-high heat, approximately 375°F (190°C).

Cook the Kebabs
Place the skewers on the grill. Cook for about 10-15 minutes, turning occasionally until the chicken is fully cooked and has a nice char. The internal temperature should reach 165°F (75°C).

Rest and Serve
Once done, remove the kebabs from the grill and allow them to rest for a few minutes before serving. Serve hot with your choice of sides or dipping sauces.
