Marinating the Lamb

Prepare the Marinade
In a large bowl, combine the minced garlic, ground cumin, ground coriander, paprika, cinnamon, turmeric, olive oil, lemon juice, salt, and black pepper. Mix well to form a marinade.

Marinate the Lamb
Cut the lamb shoulder into thin strips and add it to the marinade. Ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Cooking the Lamb

Prepare the Rotisserie
Preheat your vertical rotisserie according to the manufacturer’s instructions. If using an oven, preheat it to 400°F (200°C).

Skewer the Lamb
Thread the marinated lamb strips onto the skewers, packing them tightly to ensure even cooking.

Cook the Lamb
Place the skewers in the rotisserie and cook for about 1.5 to 2 hours, or until the lamb is cooked through and has a nice char. If using an oven, roast for approximately 25-30 minutes, turning halfway through.

Rest the Meat
Once cooked, remove the lamb from the rotisserie and let it rest for 10 minutes before slicing it thinly.

Warm the pita bread in a pan or oven for a few minutes until soft.

Serve the lamb shawarma immediately with extra tahini sauce on the side.
