    Prepare Marinade

    In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, smoked paprika, salt, black pepper, lemon juice, chopped mint, and chopped parsley. Mix well to form a marinade.

    Marinate Lamb

    Add the cubed lamb to the marinade. Ensure all pieces are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

    Soak Skewers

    If using wooden skewers, soak them in water for at least 30 minutes prior to grilling to prevent burning.

Grilling

    Preheat Grill

    Preheat your grill to a medium-high heat, about 375°F (190°C).

    Assemble Kebabs

    Thread the marinated lamb cubes onto the soaked skewers, leaving a little space between each piece for even cooking.

    Grill Kebabs

    Place the skewers on the preheated grill. Grill for about 10-12 minutes, turning occasionally until the lamb is cooked to your desired doneness. For medium-rare, aim for an internal temperature of 135°F (57°C).

    Remove the kebabs from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute. Serve with fresh mint yogurt or your choice of sides.
