Marinating the Lamb

    In a large mixing bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, cinnamon, salt, black pepper, and lemon juice. Mix well to create a marinade.

    Marinate the Lamb

    Add the cubed lamb shoulder to the marinade, ensuring all pieces are well-coated. Cover the bowl and refrigerate for at least 2 hours, preferably overnight for best flavor.

Preparing the Skewers

    Prepare the Vegetables

    While the lamb is marinating, prepare the vegetables. Cut the bell peppers, red onion, and zucchini into large chunks, suitable for skewering. Leave the cherry tomatoes whole.

    Assemble the Skewers

    After marinating, thread the lamb and vegetables onto skewers, alternating between lamb and vegetable pieces. Ensure not to overcrowd the skewers.

Grilling the Kabobs

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F or 200°C).

    Place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness (medium-rare at 135°F or 57°C).

Serving

    Remove the kabobs from the grill and let rest for a few minutes. Serve with warm pita bread, tzatziki sauce, and sprinkle with fresh parsley.
