Marinade Preparation

Prepare the Marinade
In a large bowl, combine the olive oil, plain yogurt, minced garlic, ground cumin, ground coriander, ground paprika, ground turmeric, ground cinnamon, lemon juice, salt, and black pepper. Mix well.

Marinate the Chicken
Add the boneless, skinless chicken thighs to the marinade. Ensure each piece is well-coated. Cover and refrigerate for at least 1 hour or overnight for best results.

Make the Garlic Sauce
In a small bowl, mix together the minced garlic, mayonnaise, lemon juice, and salt. Adjust seasoning to taste. Refrigerate until ready to serve.

Cook the Rice
In a medium saucepan, combine the long-grain rice, water, and salt. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Rest the Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
