Marinate the Chicken

Prepare the Marinade
In a large bowl, mix together olive oil, yogurt, minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, salt, black pepper, and lemon juice until well combined.

Marinate the Chicken
Add the boneless chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour, or overnight for best flavor.
Cook the Chicken

Grill or Bake
Preheat your grill or oven to 200°C (400°F). If grilling, place the marinated chicken on the grill and cook for about 6-8 minutes per side, or until fully cooked. If baking, place the chicken on a baking sheet and bake for 25-30 minutes, or until the internal temperature reaches 75°C (165°F).

Once cooked, remove the chicken from heat and let it rest for 5 minutes before slicing.

In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, and salt to taste until smooth and creamy.

Warm the pita bread slightly in a dry pan or microwave. Chop the fresh vegetables into bite-sized pieces.

Slice the rested chicken into strips. Serve the chicken in the warm pita bread, topped with fresh vegetables and a generous drizzle of garlic sauce.
