    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Phyllo Dough

    Thaw the phyllo dough according to package instructions. Once thawed, keep it covered with a damp cloth to prevent it from drying out.

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat.

Making the Filling

    Mix the Nuts

    In a large bowl, combine the chopped walnuts, chopped almonds, and ground cinnamon. Mix well to ensure the spices are evenly distributed.

Assembling the Baklava

    Layer the Phyllo

    Brush a 9x13 inch baking dish with melted butter. Layer 8 sheets of phyllo dough in the dish, brushing each sheet generously with melted butter before adding the next.

    Add the Nut Filling

    Spread 1/3 of the nut mixture over the phyllo layers.

    Continue Layering

    Add 4 more sheets of phyllo, brushing with butter between each one. Add another 1/3 of the nut mixture, then 4 more sheets of phyllo followed by the last 1/3 of the nut mixture.

    Top with Phyllo

    Finish with 8 more sheets of phyllo dough, brushing each with butter.

    Cut the Baklava

    Before baking, use a sharp knife to cut the baklava into diamond or square shapes.

Baking

    Bake the Baklava

    Bake in the preheated oven for about 50 minutes, until the baklava is golden brown and crisp.

    Prepare the Syrup

    While the baklava is baking, prepare the syrup. In a saucepan, combine the granulated sugar and water. Bring to a boil, stirring until the sugar dissolves. Reduce heat and simmer for about 10 minutes.

    Add Honey and Vanilla

    Remove the syrup from heat and stir in the honey and vanilla extract. Allow to cool slightly.

    Add Syrup to Baklava

    Once the baklava is done baking, immediately pour the syrup evenly over the hot baklava. Allow it to soak in and cool for at least 4 hours before serving.
