Focaccia Dough
Preparation
1. Activate the Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.
2. Mix the Dough
In a large mixing bowl, combine all-purpose flour and sea salt. Add the activated yeast mixture and olive oil. Stir until a shaggy dough forms.
3. Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.
4. First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
5. Shape and Second Rise
Once risen, transfer the dough to a greased baking pan. Stretch it out to fit the pan and use your fingers to create dimples all over the surface. Sprinkle with fresh rosemary and coarse sea salt. Cover and let it rise for another 30-45 minutes.
6. Prepare the Grill
Preheat your grill to medium-high heat.
7. Grill the Focaccia
Carefully transfer the focaccia to the grill. Close the lid and grill for about 8-10 minutes, until golden brown and cooked through. Flip halfway through if necessary.
8. Cool and Serve
Remove from the grill and let cool slightly. Cut into squares and serve warm.
