Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

Prepare the Guanciale
While the pasta is cooking, cut the guanciale into small strips or cubes. In a large skillet over medium heat, add the guanciale and cook until crispy and golden brown, about 5-7 minutes.

Combine Ingredients
Once the guanciale is crispy, lower the heat and add the drained pasta directly into the skillet. Toss to combine, adding reserved pasta water a little at a time to create a creamy sauce.

Add Cheese and Pepper
Remove the skillet from the heat. Grate the Pecorino Romano cheese over the pasta and toss well to combine. Add freshly cracked black pepper to taste.

Serve
Plate the pasta, optionally garnishing with more grated Pecorino and black pepper. Serve immediately.
