Prepare the crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, 1/4 cup of sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan tightly to form the crust.

Bake the crust
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the filling.

Make the filling
In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the remaining 1/4 cup of sugar, sour cream, and vanilla extract, mixing until combined. Add eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.

Bake the cheesecake
Pour the filling over the cooled crust and spread it evenly. Bake in the oven for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.

Chill and serve
Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving. Run a knife around the edges before removing the springform pan.
