    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare Guanciale

    While the pasta is cooking, cut the guanciale into small strips. In a large skillet over medium heat, add the guanciale and cook until crispy and golden, about 5-7 minutes.

    Mix Eggs and Cheese

    In a bowl, whisk together the eggs and grated Pecorino Romano cheese until fully combined. Set aside.

    Combine Ingredients

    Once the guanciale is crispy, add the drained spaghetti to the skillet with the guanciale. Remove from heat and quickly pour the egg and cheese mixture over the hot pasta. Toss vigorously to combine, adding reserved pasta water a little at a time until you reach a creamy consistency.

    Season and Serve

    Season generously with freshly cracked black pepper and additional Pecorino Romano cheese, if desired. Serve immediately.
